Somewhat similar to a pancake, tapioca is white, chewy and found nearly everywhere in northeastern Brazil. What makes it so popular is the number of sweet or savory fillings stuffed inside (and out) like grated cheese, chicken, butter, sun-dried beef, banana, condensed milk, grated coconut, and chocolate among others. Made from starch that is extracted from the cassava plant native to Brazil, the grains are moistened, sprinkled with water and some salt, strained through a sieve, then thinly spread on a hot frying pan or griddle where the starchy grains fuse together into the pancake. Like so many other recipes which use cassava, tapioca is a cultural legacy from Brazilian Indians and a staple of northeastern diet. It’s a great quick snack and if you go for both a savory and sweet filling, could even be a deliciously satisfying meal.
